Agar agar is a complex hydrocolloid extracted from red algae (Gracilaria spp and Gelidium spp) commonly used as a gelling agent in food preparation. Agar agar does not require the addition of other products or ions for gelation and its strong gelling capacity allows the formation of agar gels from very dilute solutions. The gels formed are firm and strong, with a short texture.
